Fall Pumpkin Oatmeal Cookie Recipe

Hey Guys,
I'm so excited we are getting to fall! I found this WW recipe for pumpkin cookies. They are super yummy! So I'm going to post it. Hope you get a chance to try them and enjoy.

Pumpkin Oatmeal Cookies

I made these with real butter and sugar and got 60 cookies for about 1 point each.

2 cups flour
1 cup quick or old fashioned oats
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup butter
3/4 cup firmly packed brown sugar
3/4 cup granulated sugar
1 egg
1/3 cup applesauce
1 tsp vanilla
1 cup cooked mashed or canned pumpkin

Preheat oven to 350. Combine flour, oats baking soda and spices. In large mixing bowl, cream butter; gradually add sugars, beating until light and fluffy. Add egg, applesauce and vanilla; mix well. Alternate additions of dry ingredients and pumpkin, mixing after each addition.

Drop by well-rounded teaspoons (these are rediculously small but only one Weight watchers point so for those of you who don't care, go ahead and make them big! =) ) onto lightly greased cookie sheet. bake 10-12 minutes, just until browned. Remove from sheet and cool on racks.
